Soak the dried scallops in water until tender. Shred the dried scallops and set the water aside. Marinate the chicken for half an hour. Set aside.

Rinse the rice and pour in the water in (1). Place the rice onto the lotus leaf inside a container. Steam for 12 mins in the 2-in-1 Steam Oven using the "Steam" mode.

When the rice is half-cooked, put in chicken, Chinese wolfberries and red dates. Fold the lotus leaf and steam for 8 more mins.
