Longevity Peach Bun

Less than 30 min
Ingredients (Yield: 3-4 servings):
300g plain flour
15g sugar
3g instant yeast
7g oil
145ml water
1-2 drops food colouring (pink)
Fillings:
150-200g lotus seed paste
Steps:

Except food colouring, mix all ingredients with the Electric Hand Mixer (with Stirrer) until well mixed. Remove and knead the dough until smooth. Cover with cling wrap and rest for 5 minutes.

。Roll dough into long strip, divide into equal portions of around 30g each. Stuff each portion with 15-20g of lotus seed paste. Seal the opening underneath. Shape into peaches. Place inside the Jet Steamer and allow fermentation for 45 minutes.

Steam for 15 minutes with the Jet Steamer. Allow resting for 10 minutes and remove. Crease the surface using a spatula.

Use a toothbrush to gently flick some food colouring onto buns. Return to steam for 1 minute. Remove and serve.
Tips:
Steam the buns in a Jet Steamer and remember to keep the buns away from the side as the excess moistures may affect the presentation.
