Five Spices New Year Tea Eggs
Chinese Spice Mix (or Star Anise, Sichuan Pepper, Cinnimon & Fennel)
Ginger & Spring Onion
Black Tea Leaf (or Tea Bags)
Wash surface of eggs. Boil salt and eggs in water for 10 min. Turn off stove and let eggs sit in hot water for another 5 min.
Carefully knock egg shells with a small teaspoon to create cracks.
Put eggs, spice mix pocket and all other ingredients into Slow Cooker. Add water and seasonings to fully cover eggs. Boil over high heat for 1 hour. Then switch to low heat and cook for another 2 hours.
Turn off Slow Cooker and serve. For a stronger flavour, leave eggs in sauce overnight before serving.
