Sweet and bitter apricot kernels
Rinse Jiashi melon. Remove peels and seeds. Rinse and briefly soak sweet and bitter apricot kernels in water. Blanch partridge and lean pork with ginger and Shaoxing wine.
Put sweet and bitter apricot kernels, lean pork, partridge and dried persimmons into the Ultimate Rice Cooker. Pour in boiling water, close and lock the lid. Select the "Soup" function.
Open the lid when the steam is fully released. Put in Jiashi melon. Press the "Soup" button again and cook for another 20 minutes with the lid opened. Season with salt.
