Marinate chicken and dice garlic.
Saute chicken, ginger, spring onions and garlic in a saucepan. Pour in Shaoxing wine.
Cover mud crabs with corn starch. Soak briefly in boiling oil before simmering with sauted chicken, stock and spring onions.
