Sliced Pork Belly with Spicy Garlic Sauce

Pork Belly500 g
Ground White PepperTo Taste
Minced Garlic2 tbsp
Light Sauce Soy1 tbsp
Black Vinegar1 tbsp
Chinese Cooking Wine1 tbsp
Chili Oil1 tsp
Sesame Oil½ tsp
Rinse and remove hair from the pork belly.
Mix the seasonings together in a bowl.
Marinate the pork briefly. Put it into the Jet Steamer. Cover the lid and steam for 45 minutes.
When the pork is cooked, rinse it with ice water.
Slice the pork. Arrange on a plate and serve with the dipping sauce.
Pierce the pork rind with a meat tenderizer or fork to create small holes before rinsing with ice water. This can reduce greasiness and create a crisp texture.
