Crispy Oil-free Fried Chicken

Blanch the chicken with ginger and Shaoxing Wine.
Rub the chicken with salt.
Cook the marinated chicken with stock for 20 minutes.
Mix the vinegar, maltose and water and rub it on skin of the chicken. Air-dry it. Repeat this step at least 3 times. After that, air-dry it for one night.
Put the chicken in halogen pot and the breast facing upward. Cook it for 20 minutes at 180°C. After that, turn the chicken upside down and cook it for 15 minutes at 220°C.
