Vietnamese Spring Rolls with Avocado and Shrimp

Cook fresh shrimps in boiling water, deshell and open them up like butterfly. Set aside and ready for use.
Peel avocado and cut into dice.
Rice paper soften with warm water, then flatten.
Place the fresh shrimp and avocado on the rice paper alternately, then put the butter lettuce.
Season with a small amount of salt and pepper, roll up and place spring rolls on plate. Serve with lime pepper and fish sauce.
