Stewed Chicken with Chinese Mushrooms and Dried Oysters

Rinse and chop the chicken thighs into pieces. Mix with light soy sauce, Shaoxing wine, sugar, pepper and corn starch. Add shredded ginger and sectioned spring onions. Marinate for 30 mins.
