Oven Roasted Sparerib with Pineapple

Olive Oil
Rinse and pat-dry the spareribs. Remove the inner rib membrane.
Sauté all spices with dry pan. Blend them in the Food Processor together with brown sugar. Set aside.
Combine all sauce ingredients with water. Set aside.
Evenly spread the dry rub from step (2) on the surface of spareribs, and then apply the sauce from step (3) evenly on it. Marinate for about 15 minutes.
Mix chicken stock, honey and white vinegar. Set aside for later use.
Fold two big sheets of tin foil together. Put another tin foil in the middle. Place the pineapple core on it with the marinated sparerib. Then wrap them well. Leave a small opening at one end. Pour the seasonings from step (5). Close the opening and bake it at 180°C for 1 hour with 2-in-1 Steam Oven.
Pour out the sauce from the tin foil. Add appropriate amount of Ba Bao paste and Chu Hou paste. Cook the sauce until thicken.
Set the Oven at 250°C. Apply the sauce from step (7) on spareribs. Put it back in the Oven. Cook it 3 more times until it burns. Done.
